About Cream of Mushroom Soup

While there are many cream of mushroom recipes out there, it was the dish’s simplicity that truly won me over. I just had to try making it myself. But since the name of my blog is 'Cook Twirl,' how could I not add my own twist to the classic recipe? My twist was to make the soup healthier by adding curry leaves and skipping the flour. The ingredients for my soup are simple, yet full of flavor and a silky, creamy texture.

Simple Ingredients: The soup requires just a few simple ingredients, all of which are easy to find in most kitchens. Even if you leave out a few ingredients, it’s perfectly fine—mushrooms add a natural umami flavor that deepens the richness of the soup.

Cream of Mushroom Soup


Ingredients

Butter 2 tablespoons

8 - 10 Curry Leaves washed & finely chopped

1 tablespoon minced Garlic

200 grams Button Mushrooms washed & sliced

1 medium sized Onion chopped

Black Pepper powder 1/2 teaspoon

Salt to taste

1 - 2 tablespoons of Oil

Full fat Cream about 150ml

Water 2 cups or as desired

Recipe Step-by-Step

Step-1

Wash and slice the button mushrooms.

Peel garlic and mince it.

Wash the curry leaves and finely chop it.

Finely chop the onion.

In a cooking pot add butter and oil over a medium heat.

Once the oil is slightly heated add the minced garlic and sauté until it turns light golden brown.

Then add the curry leaves and fry till it releases the aroma.

Add the chopped onions and cook for about 3-4 minutes, until softened and translucent, over medium-high heat.

Next add the sliced button mushrooms and fry it for 2-3 minutes.

Season with salt.

Cover the cooking pot with a lid and allow the mushrooms to cook in its juices for about 5 minutes or until it is tender.

Next, remove some of the cooked mushrooms and transfer them to a bowl to set aside.

Turn off the heat and cool the mushroom mixture. Once cooled add the mixture to a blender and blend it coarse.

Add the coarsely ground mixture back to the cooking pot.

Add water and keep the flame on medium high heat.

Then, add black pepper powder and cook for another 2 minutes, until the soup thickens slightly.

Next add the fresh cream and mix it well.

Then add the cooked mushrooms that were set aside. Stir the soup well and turn off the heat.

Serve the soup in a bowl and garnish it with cilantro/ coriander leaves. Twist on the classic cream of mushroom soup is now ready to enjoy!

Use fresh mushrooms and try different varieties to enhance the flavor of this soup.

Allow the mushrooms to cook thoroughly until they reach a rich golden-brown color before adding any liquids. This step enhances their flavor and adds more depth to the soup.

Don’t skip sautĂ©ing the garlic and onions, as they provide a savory, aromatic base that enhances the mushrooms' umami flavor.

Chopped and roasted garlic, croutons, or any herbs like fresh thyme, rosemary, or parsley can be used to garnish the soup.
