I've used the vermicelli typically used in making Sheer
Khurma, which is thinner than regular vermicelli. This allows it to absorb the
cream more easily, creating a smooth and creamy dessert while retaining a
slight bite, adding a pleasant texture.
Since this is a thinner vermicelli, I have used the unroasted
variety for this recipe to maintain the white color of the kheer. However, if
you prefer, you can use store-bought roasted vermicelli or roast it yourself
before cooking.
You can replace sugar in Kheer (or Payasam) with natural
alternatives like jaggery, honey, stevia, maple syrup, coconut sugar, or agave
syrup. Each option not only adds a unique flavor but may also alter the color
and appearance of the kheer.
If you prefer a chilled version, allow the kheer (or Payasam)
to cool in the fridge for 1-2 hours to firm up slightly, then add the passion fruit
pulp just before serving.
To make dessert vegan, substitute cream with almond milk,
coconut milk, soy milk, or cashew milk. For extra creaminess, add coconut cream or
cashew cream. These simple swaps will give you a rich, creamy, and delicious
